Methods The sources of uncertainty in the process of determination were analyzed, a mathematical model of uncertainty evaluation was established and the effect of measurement uncertainty was assessed. Results The expanded uncertainty was 0.06 g/kg (k=2) with 0.75 g/kg of the content of propionate. The major sources of measurement uncertainty included the sample recovery, the calibration of standard curve and preparation of standard solution. Conclusion It is necessary to control experimental conditions, including guaranteeing the sample recovery, the linearity of standard curve, and the testing results accurately.
