漳平水仙茶品种、品质特征及其采制技术 朱留刚，陈玉真，张文锦 （福建省农业科学院茶叶研究所，福建福安 355015 ） 摘要：水仙茶树品种是福建乌龙茶主栽品种之一，在我国主要茶区亦均有种植，其在乌龙茶出口中所占比例也较 高，市场接受度及经济效益较好。然而，当前学界对于漳平水仙茶的品种特征、产品、品质及其加工工艺特色尚 缺乏系统性总结，不利于水仙茶树品种的进一步推广及应用，也一定程度上阻碍了相关产业的发展。基于此，本 文试图系统、全面的总结水仙茶的品种特征、产品与品质特色、加工工艺以及栽培管理等内容。以期为进一步科 学、合理栽培管理、生产、加工水仙茶提供理论基础。 关键词：茶叶加工；水仙茶；培育；采制 Study on Characteristics of Variety, Quality and Processing Technologies in Zhang Pin Narcissus Tea ZHU Liugang, CHEN Yuzhen, ZHANG Wenjin （Tea Research Institute，Fujian Academy of Agriculture Sciences, Fu’an, Fujian, 355015,China ） Abstract: Narcissus tea, one of the Fujian oolong tea cultivars ，grow in Chinas major tea-growing areas,, have a higher in proportion in oolong tea export, have its own market acceptance and good economic. However, the current academic is still lack of systematic summary of Zhangping Narcissus tea varieties, product, quality and processing characteristics, this is not only unfavorable to the further promotion and application of narcissus tea varieties, but also to some extent hindered the development of related industries. In order to provide a theoretical basis for scientific and rational management of cultivation, production, processing narcissus tea, this paper attempts a systematic and comprehensive summary for narcissus tea varietal character, quality characteristics of the product, processing and cultivation management, etc. 1 Keywords: Narcissus tea, cultivation, harvesting and processing, technologies 1 引言 水仙茶树品种为福建乌龙茶主栽品种之一，亦在乌龙茶出口中占有较重比例。水仙茶树种植区域较为 广泛，在长江以南主要产茶区域均有种植[1-2] 。其按茶树品种和加工制法的不同，可分为广东水仙茶（如凤 凰水仙、八仙茶等）和福建水仙茶（如闽南水仙、闽北水仙和漳平水仙等），茶类涵盖乌龙茶、白茶、红 茶和绿茶。 作者简介：朱留刚（1985-），男，研究实习员，研究方向：茶树栽培与生理生态研究。联系电话：1875938
