Origin History The earliest record of using chocolate dates back before the Olmec (奥尔梅克人). The Mayas believed that chocolate had mystical properties. Type Dark chocolate is produced by adding fat and sugar to the cacao mixture. Dark chocolate, with its high cocoa content, is a rich source of epicatechin(表儿茶素) and gallic acid(五倍子酸), which are thought to possess cardioprotective(心脏保护) properties. It has also been said to reduce the possibility of a heart attack when consumed regularly in small amounts. Type Milk chocolate is sweet chocolate that additionally contains milk powder or condensed milk. In the U.K. and Ireland, milk chocolate must contain a minimum of 20% total dry cocoa solids; in the rest of the European Union, the minimum is 25%. White chocolate is formed from a mixture of sugar, cocoa butter and milk solids. Although its texture(本质) is similar to milk and dark chocolate, it does not contain any cocoa solids. Because of this, many countries do not consider white chocolate as chocolate at all. Type Unsweetened chocolate (不加糖的巧克力) is pure chocolate liquor, also known as bitter or baking(烘焙)chocolate. It is unadulterated(纯粹的) chocolate: the pure, ground(研磨), roasted chocolate beans impart(给予) a strong, deep chocolate flavor(风情).
