In this paper, the basic principle of FRET was introduced, and then the research progresses of FRET in the analysis of hazard factors of food safety were summarized, including the detection of mycotoxins, antibiotics and heavy metals, etc. Finally the future perspective of FRET in the fields of food safety was prospected.
