食品研究与开发 ２０17 年 4 月 标准与检测 Ｆood Research And Development 第 38 卷第 7 期 119 DOI ：10.3969/j .issn.1005-6521.2017.07.026 五指山茶树花功能性成分分析 1 1 2 陈冬梅 ，李铭 ，陈明星 （1. 三亚航空旅游职业学院 ，海南 三亚 572000 ；2. 黑龙江农垦科技职业学院 ，黑龙江 哈尔滨 150431） 摘 要 ： 对比分析 了五指 山茶树花花朵、花蕾与茶叶 中的功能性成分茶 多酚、粗 多糖 、总黄酮、总皂甙、超氧化物歧化 酶、游离氨基酸含量差异 ， 茶树花盛开花朵和花蕾中总黄酮和总皂甙含量高于茶叶，总黄酮含量分别为 1 230 mg/ 100 g 和 1 130 mg/ 100 g ，总皂甙含量分别为 0.629 g/ 100 g 和 0.761 g / 100 g ；茶树花 中茶 多酚、粗 多糖、游 离氨基酸低 于茶叶，茶 多酚含量分别为 6.2 g/ 100 g 和 5 g/ 100 g ，粗 多糖含量分别为 1.63 g/ 100 g 和 1. 15 g/ 100 g ，游 离氨基 酸含 量分 别 为 7 g/ 100 g 和 11 g/ 100 g ，而茶树花 中检测到的超氧化物歧化酶含量远低于茶叶。 关键词 ： 茶树花 ；花朵；花蕾；功能性成分 ；对比分析 The Analysis of Functional Components in Wuzhishan Tea Plant Flower 1 1 2 CHEN Dong-mei ， LI Ming ， CHEN Ming-xing （1.
