Background:
Okra,alsoknownasgumboorladysfinger,isavegetablecommonlyfoundinmanycountries.Itisknownforitshighnutritionalvalueandhealthbenefits,includingbeingrichinvitaminsandminerals,aswellasfiber.Inaddition,okracontainspectin,whichisatypeofsolublefiberthatisknowntohavehealthbenefitsforthedigestivesystem.
Inrecentyears,therehasbeenincreasinginterestintheuseofokraasasourceofpectinandinsolublefiberduetoitsnumeroushealthbenefits.Therefore,theaimofthisstudyistoinvestigatetheoptimalconditionsfortheextractionofpectinandinsolublefiberfromokra.
Objectives:
1.Tooptimizetheextractionconditionsforpectinandinsolublefiberfromokra.
2.Todeterminetheyieldandpurityoftheextractedpectinandinsolublefiber.
3.Toevaluatethephysicochemicalpropertiesoftheextractedpectinandinsolublefiber.
Methodology:
1.Okrasampleswillbeobtainedfromthelocalmarketandsortedbysize.
2.Theokrapodswillbewashedandtrimmedtoremovethestemsandtips.
3.Theokrapodswillbecutintosmallpiecesanddriedatalowtemperatureinavacuumoven.
4.Thedriedokrapieceswillbegroundintoapowderusingagrinder.
5.Thepectinandinsolublefiberwillbeextractedusingdifferentsolventsandextractionconditions.
6.Theyieldsofpectinandinsolublefiberwillbedeterminedusinggravimetricmethods.
7.Thepurityoftheextractedpectinandinsolublefiberwillbeevaluatedusingspectrophotometryandchromatography.
8.Thephysicochemicalpropertiesoftheextractedpectinandinsolublefiber,includingmolecularweight,degreeofesterification,andrheologicalproperties,willbeanalyzed.
