青竹 China’s four major cuisines A Brief Introduction 中国四大菜系 简介 Chinese Food China has many cuisines from all over the country. The four major cuisines are: 四川菜(sì chuān cài)Sichuan food Sichuan food is from Sichuan province in the central part of China. It is famous for peppery and chili flavors and best known for being spicy. One of the most well known dishes is “麻婆豆腐(má pó dòu fu)”, a particularly spicy tofu recipe. Chinese Food 山东菜 (shān dōnɡ cài) Shandong food Shandong food is from Shandong province in the mid-eastern part of China. It is generally salty, and commonly prepared with strong spices including onion and garlic. One of its most famous dishes is certainly Peking (Beijing) roast duck. Chinese Food 广东菜 (ɡuǎnɡ dōnɡ cài) Cantonese food Cantonese food is from Guangdong province in the southern part of China. It emphasizes light cooking with a seemingly limitless range of ingredients. Cantonese soup is very unique using various kinds of herbs added for health reasons. To many foreigners dim sum 点心 is representative of Cantonese Cooking. Chinese Food 扬州菜(yánɡ zhōu cài) Yangzhou food Yangzhou food is from the Yangtze Delta, where Shanghai is located. Compared with other Chinese food, Yangzhou food seems a little bit sweet. Yangzhou fried rice and Yangzhou steamed meat dumplings are well known throughout China.
