昆明理工大学本科学士学位论文年产6万吨饮料厂工艺设计澄清苹果汁工艺设计姓名：孔庆龙指导教师：赵天瑞学科专业：食品科学与工程起始日期：2010年3月22日提交日期：2010年6月10日摘要：本设计为年产6万吨饮料厂工艺设计。主要设计内容为澄清苹果汁饮料的工艺设计。在对全球和我国苹果产销和加工的现状进行充分调查的基础上，分析了我国苹果汁饮料的生产和贸易现状。拟定在灵宝市投资苹果汁饮料厂。首先依据拟定的生产量对生产车间进行了物料、热量衡算，进而依据规范进行了车间的工艺设计，进行了主要设备选型。然后对公用系统、辅助部门、土建等方面做了初步设计，同时对水、电、汽的用量和费用进行了估算。设计按照HACCP标准进行了详细的分析与统计，使产品符合国际标准，提高了产品质量，使其达到国际水平。最后，进行了必要的技术经济分析。设计预计投资为1.5亿元，回收期为4年。生产流程尽量提高机械化、自动化、节能水平，同时力求技术上先进，质量上可靠，布局上合理，规范。关键词：澄清苹果汁；饮料；HACCP；工艺设计Abstract：This design is the main production capacity of 60,000 tons of fruit juice process design. Main design content for clarification of apple juice drinks process design.On the basis of full investigation for the global and China’s apple production and processing status,the design analyses our country’s apple juice production and trade status.It plans to invest to build a apple juice productionplant in lingbao.First of all by the proposed production on production workshop for the item, caloric, which in turn was based on the specification of technical design workshop, for major equipment selection. And then, on the common system, the secondary sector, construction, and so do the preliminary design, at the same time on the water, electricity, steam usage and provides an estimate for the cost.
