Ingredients: 200 g minced pork 150 g Vermicelli 4 scallions, finely chopped 1 garlic clove, crushed 1 tbsp finely chopped fresh ginger 2 spring onions, finely sliced extra, garnish Seasoning: 1 tsp cornflour 1 1\2 tbsp light soy sauce 2 tbsp Chinese rice wine 1 tsp sesame oil 2 tbsp vegetable oil 2 tsp chilli bean sauce 185 ml chicken stock 1 and 1\2 tsp sugar Procedures: Combine the pork, corn flour, and 1 tbsp of soy sauce, rice wine, sesame oil in a large bowl.Use chopsticks or your fingers to stir them for 10 minutes. Put the vermicelli in a heatproof bowl, cover with boiling water and soak for 5 minutes, rinse and drain well. Heat a wok over high heat, add the vegetable oil, then the scallions, garlic, ginger and chili bean sauce, stir-fry them for 10 seconds. Later add the pork and fry for 2 minutes. Stir in the stock, salt, the remaining soy sauce, rice wine and sesame oil. Mix the vermicelli in the wok. When it is boiling,bring the heat down. And simmer for about 7 minutes, or until the liquid is almost absorbed. Garnish the dish with the extra spring onion and serve it.
