[M e thod s]W ith the instruction of HACCP System and Its App lications Gu idelines and General Sanitary Regulations for Food Enterprises recomm ended by Codex A lmi entarius comm ission ( CAC) , site investigation, laboratory detection and san itary adm in istration m ethodw ere applied to carry out hazard analysis of all the related raw materials and processing technology in order to find out the key poin ts and relevant controlm easures. [ Re su lts] The key pointsw ere found out, the controlm easureswere taken and HACCP system w as established in the instant noodles producing enterprises. [ Con clusion] After the establishm ent of the system, the san itary quality of the products has been kept stab le; theHACCP system has been proved to be effective.
