稻谷加工产物的镉含量及累积量分析

Abstract:Tocharacteristics of cadmium in paddy during processing and provide guidance for the use of paddy contaminated by cadmium and its safety control during processing. Based on four paddy samples contaminated by cadmium in different degrees, husking and milling were conducted to produce polished rice. After that, alkaline steeping was applied to separate rice starch and protein. Graphite furance atomic absorption spectrophotometry (GFAAS) was applied to detect cadmium concentration of all products. The results showed that during husking and milling, with the improvement of processing degree, cadmium concentration of rice decreased. Cadmium concentration in paddy was in the order of bran shell outer endosperm middle endosperm core endosperm (polished rice). About 40 % cadmium of paddy accumulated in polished rice. During rice starch and protein isolation, cadmium concentration was in the order of rice protein cream-colored starch rice starch. The amount of cadmium in rice protein was highest and 53.21% of cadmium in rice accumulated in rice protein isolated. Only 18.34% of cadmium of rice accumulated in rice starch. Cadmium was not equably distributed within different fractions and components. During husking and milling, with the improvement of processing degree, cadmium concentration of rice decreased. Cadmium in polished rice mainly accumulated in protein rather than starch. As a result, rice starch isolation provide the possibility for the use of rice contaminated by cadmium.
