摘要
草菇起源于广东韶关的南华寺中,300年前我国已开始人工栽培,在约在本世纪30年代由华侨传入世界各国,是一种重要的热带亚热带菇类,是世界上第三大栽培食用菌,我国草菇产量居世界之首,主要分布于华南地区。每100g鲜菇含207.7mg维生素C,2.6g糖分,2.68g粗蛋白,2.24g脂肪,0.91g灰分。草菇蛋白质含18种氨基酸,其中必需氨基酸占40.47-44.47%。此外,还含有磷、钾、钙等多种矿质元素。所含粗蛋白却超过香菇,其他营养成分与木质类食用菌也大体相当,同样具有抑制癌细胞生长的作用,特别是对消化道肿瘤有辅助治疗作用,能加强肝肾的活力。它能够减慢人体对碳水化合物的吸收,是糖尿病患者的良好食品。的含水率,不能做长期的保存,同时也不利于运输及避开淡季缺乏的情况,经济效益就较低。为了克服这些弊端,经常采用干燥的方法对进行加工,目前干燥的方法有很多,主要采用的是日光、热风、真空、真空冷冻、微波或者组合干燥的方法。综合各方面本次试验采用干燥作为的干燥方式。选定不同的、干燥,本试验通过感官评定对干燥后的。
