喷雾干燥用百合浆液的工艺优化 专业:食品科学与工程 姓名:向荣达 指导教师:王军节 摘 要 百合浆液的前期工艺优化对后期喷雾干燥制取百合粉有重要作用。研究喷雾干燥用百合浆液的工艺条件,主要包括百合浆液的护色处理和生物酶处理。百合浆液的护色处理包括百合片的热烫处理以及百合浆液的抗氧化剂护色处理,热烫处理实验中,通过单因素试验对热烫时间进行优化,得到最佳热烫时间为60s;在抗氧化剂护色实验中,通过单因素试验对D-异Vc钠浓度进行优化,得最佳浓度为0.3%。百合浆液的生物酶处理实验中,在对酶浓度、酶解温度、酶解时间这三个影响因素进行单因素试验的基础上,利用响应面试验设计法上述三个因素进行优化,并通过回归方程和响应曲面,得到的最佳工艺条件为:酶浓度0.41%,酶解温度44.4℃,酶解时间48min,在最佳条件下,百合浆液黏度为40.2mpa.s。 关键词 百合浆液,护色处理,生物酶处理,工艺优化 ABSTRACT The optimization of process prophase of Lily grout has an important effect on spray drying for making lily powder in the later period. Study the process conditions of lilies grout that use for the spray drying, mainly including the lily grout’s slurry and biological Enzyme treatment. The armor treatment of Lily grout include the heat treatment of lily and the antioxidant protection treatment of lily grout, according to single factor experiment optimize the heat treatment experiment process, to optimize the hot iron time, the best time for the hot iron is 60s, The antioxidants in the experiments, according to the single factor experiment of different concentrations of sodium Vc - optimized, the optimal concentration of 0.3%. Lily grout biological processing experiments, on enzymatic hydrolysis enzyme concentration, temperature,time, these three factors on the basis of single factor experiment, by the response surface experimental design method, the above three factors, and the optimized by regression equations and response surface, the optimum technological conditions for enzyme concentration, temperature, zymolysing 0.41% 44.4 degrees Celsius, enzymatic hydrolysis time 48min, in the best condition, lily grout viscosity for 40.2 mpa.s.
