Introduction The translation of Chinese dishes plays an important role in spreading the Chinese culture. Good translation version can make the foreign friends know better about the Chinese dishes and make them enjoy a high reputation. This article discusses about the main impacts of the cultural differences on the translation of Chinese dishes and analyzes the current translation problems in this aspect. Suggestions are offered to keep the cultural characteristics of Chinese dishes in translation. I. Research Background and The Significance of the Research 1.Research Background With the accelerated development of globalization，Chinese diet has become worldwide，which offers a valuable opportunity to spread Chinese diet culture．English translation of Chinese dish name helps foreigners understand Chinese dish，and transmits Chinese culinary culture as well．Due to the wide cultural gap between China and the west in terms of the dish—naming ways，it is difficult to translate the Chinese dish names into English．With the guidance of the translation theories and the intercultural communication theory，the present study analyzes the purpose of dish name translation，the intercultural translation strategies and approaches applied to dish names as well as negotiation on dish names in intercultural dialogues． The research findings show that the English translation of all fact—telling dish names can be employed directly；the English translation of most culturally—loaded dish names is still unacceptable，but it is generally acceptable for the translation of dish names related to Chinese traditional festivals and Chinese—featured dish names．All in all，the purpose of the present study is to make an effort to standardize and unify the English translation of Chinese dish names and to spread Chinese dietetic culture throughout the world in a better way． 2.The Significance of the Research Nowadays，China plays all increasingly important role on the global stage．More
