米糠蛋白的研究综述 摘要:廉价的米糠是稻谷加工的副产物是丰富的蛋白质来源,并且米糠蛋白的氨基酸组成丰富,具有低过敏性。所以米糠蛋白的提取越来越受到关注,米糠蛋白的提取方法主要有碱法提取、酶法提取和物理法,复合法提取,本文主要就米糠蛋白的提取方法进行综述,针对米糠蛋白的改性后的功能进行阐述。 关键词:米糠蛋白 碱法 酶法 Abstract: Cheap rice bran is a by-product of rice processing,which is a rich source of protein, and its amino acid composition is rich, hypoallergenic.
