本科毕业论文（设计） 论文题目 ： 红薯膳食纤维饮料的研制 专 业 ： 食品质量与安全 系 部 ： 食品工程学院 作者声明 本毕业论文（设计）是在导师的指导下由本人独立撰写完成的没有剽窃抄袭造假等违反道德学术规范和其他侵权行为对本论文的研究做出重要贡献的个人和集体均已在文中以明确方式标明因本毕业论文（设计）引起的法律结果完全由本人承担 毕业论文（设计）成果所有 特此声明 ： 作者学号 ： 作者签名 ： 年 月 日 摘 要 膳食纤维作为功能性食品，近年来在各国得到了广泛的关注。许多食品专家把膳食纤维作为21世纪的功能食品。有些营养学家把膳食纤维看作是继蛋白质、脂肪、糖、矿物质、维生素和水六大营养素之后的第七大营养[1]。我国是红薯种植大国，但对红薯的研究能力尚有不足，资源浪费严重，经济利益损失较大。进行该研究将有助于红薯资源的综合开发，提高其经济价值，能提高其利用率[2]。本文旨在研究红薯的膳食纤维提取及其饮料的加工以及制作工艺，通过对红薯膳食纤维饮料的研究开发，进一步提高红薯深加工产品的附加值，延长红薯加工的产业链，同时变废为宝，解决环境污染问题，同时也能充分利用资源[3]。本文采用物理法提取红薯中膳食纤维，以红薯膳食纤维作为实验的材料，对红薯膳食纤维饮料进行研究，以红薯膳食纤维的质量指标为衡量的标准，结果表明：红薯膳食纤维的添加量为9%(料液比)，甜味剂的添加量为11%(料液比)，酸味剂的添加量为0.5%（料液比）时，红薯膳食纤维饮料的质量是最好的。 关键词：红薯膳食纤维；酸味剂；甜味剂；料液比 Abstract Dietary fiber as a functional food, has been widely concerned in the world. Many food experts to dietary fiber as functional food in twenty-first Century. Some nutritionists to dietary fiber as a protein, fat, sugar, minerals, vitamins and water six big nutrients after the seventh nutrition. China is a big country of sweet potato planting, but also sweet potato research capacity is insufficient, a serious waste of resources, economic interest loss bigger.
