1-MCP乙烯受体阻断剂对香蕉果实采后生理和品质的影响

摘要:我国新鲜果蔬采后的腐烂损失问题十分严重,制约着我国果蔬产业的发展。乙烯会导致果蔬的成熟和衰老。1-MCP,一种乙烯的竞争性抑制剂能阻断果蔬中乙烯与受体的结合,抑制乙烯所诱导的各种生理生化反应,减少呼吸强度 ,并且抑制效应强,时效较长, 从而延缓果蔬的成熟进程, 延长贮藏寿命 , 达到保鲜效果。而经过 1-MCP 处理的果蔬可以保持同采摘时一样的新鲜和口感,并且在包装、运输、货架和销售过程中都能保持一致。经实验证明,1-甲基环丙烯(1-MCP )对延迟香蕉果实软化效果显著,作用机理主要是:降低了可溶性糖和可溶性固形物的上升速率,从而延缓了香蕉的软化【1】。不仅如此,由于香蕉是跃变型果实,在1-MCP处理后,香蕉在跃变前期加入外源乙烯也不能使呼吸高峰提前。这样一来将大大提高香蕉的品质,获得更好的商业价值。
Abstract:The postharvest decay loss of fresh fruits and vegetables is a serious problem restricting the development of Chinas fruit and vegetable industry. Ethylene can cause ripening and senescence of fruits and vegetables. 1-MCP, an ethylene competitive inhibitor blocking the ethylene binding to receptors in fruits and vegetables, the inhibition of ethylene induced by a variety of physiological and biochemical reactions which reduce the respiration intensity and inhibitory effect of aging longer, thus slow down the maturation process of fruits and vegetables, extending the storage life, achieving a preservation effect. After 1-MCP on fruits and vegetables can be kept with picking fresh and taste, and in packaging, transport, shelf, and the sales process can be consistent. The experiments show that significantly soften the effect of 1 ?methylcyclopropene (1-MCP) o n the delay of banana fruit, the mechanism of action: to reduce the rising rate of soluble sugar and soluble solids, thus delaying the softening of banana [1]. Moreover, the banana is a climacteric fruit, 1-MCP, the banana in the jump with pre-nor can the respiratory peak in advance by adding exogenous ethylene. In this way, the quality of bananas could greatly enhanced, get- ting better business value.
