摘 要 和面机实际上是一种搅拌机，其作用是进行面团的调制，既将各种原、辅料加水搅拌，调制成即符合质量要求，又适合机械加工成形的面团，主要用于面包、饼干、糕点、膨松食品、夹馅饼等食品和淀粉和谷朊粉生产的面团调制。传统的和面机一般是在一根轴上安装几片浆叶，按主轴的安装形式，可分为立式和卧式两种，立式和面机对面团的拉伸作用较强，适应于调制韧性面团，卧式和面机对面团的拉伸作用较弱。适用于调制酥性面团。而卧式和面机主要是指搅拌容器轴线与搅拌器回转轴线都处于水平位置，它的特点是，结构简单，制造成本低，卸料清洗方便，所以在食品加工中，如面包、饼干、糕点及一些饮食行业的面食中得到了广泛的应用。在我国国内的和面机产品中，其工作方式大都为间歇式的，这种和面机工作时要人工投料，每个工作周期，要手动控制电动机的启动和停止，电动机频繁启动。用这种和面机，在工作中操作人员劳动强度大，需要专人操作和面机，主料、副料及加水量比例难以正确控制，稳定性差，和面程度也难以控制一致，这些都影响面团的性能的稳定，会影响到最终产品的稳定性，会影响到整个生产线的工作效能。我们所设计新型的目的在于针对现有技术的不足，提供一种单轴式自动和面机，能实现连续自动和面作业。淀粉和谷朊粉生产线配用这种和面机，可提高淀粉和谷朊粉生产线自动化程度。单轴式自动和面机面向淀粉和谷朊粉生产线中下一个工序熟化机供料，可实现淀粉和谷朊粉生产线主机部分的平面化布置，减少建厂投资，操作方便，有利于提高淀粉和谷朊粉生产线的工作效能。 关键词：淀粉 和面机 Abstract Pick to surface and the machine is actually a mixer, its role is the modulation of dough, will all kinds of raw materials, mixing water, modulation is to meet the quality requirements, and is suitable for machining the formed dough, bread, biscuits, mainly used for bulk food, cakes, pies and other foods clamped and starch and gluten the production of dough modulation.
