SHANDONGUNIVERSITY OF TECHNOLOGY 毕业论文 采收期对富士苹果贮藏品质的影响 学 院: 农业工程与食品科学学院 专 业: 食品科学与工程 学生姓名: 陈志强 学 号: 0911032047 指导教师: 李富军 副教授 2013 年 6 月 摘 要 本文以红富士苹果为材料,研究了不同采收期对红富士苹果贮藏期间各种生理指标的影响。研究包括以下三个大类:第一,病害发生率,包括苦痘病、腐烂病、虎皮病等;第二,贮藏期间的品质,如SSC、TA、硬度等;第三,贮藏期间其他相关指标,主要为乙烯、叶绿素含量等。结果表明: (1)随着贮藏时间的增加,红富士苹果果实的硬度,可溶性固形物,可滴定酸,叶绿素含量总体下降。 (2)采收期过早容易发生大规模虎皮病致使收获受到较大损失,如果采收期较早应该避免果实的长时间贮藏。 (3)采收期越晚,红富士苹果果实的呼吸峰来临越快,如不尽快入库,果实内的物质会因为呼吸作用的加剧而产生较大损失,影响果实营养价值和风味。应该尽早入库贮藏。 (4)适期采收,红富士苹果果实硬度,可溶性不形物,有机酸含量变化幅度小。 关键词:苹果,采收期,贮藏品质,叶绿素含量 Abstract In this paper,we materialed for Fuji apple,different harvest time on the red Fuji apple during storage was studied the influence of various physiological indicators.Research including disease rate,including bitter pox disease ,rot disease ,skin disease,etc;The quality during the storage,such as SSC,hardness,TA,chromatism,etc;Other related indicators during storage,mainly including MDA and chlorophyll content,etc.The results show that : (1) With the increase of storage time, Fuji apple fruit hardness, soluble solids, titratable acid, the overall decline in chlorophyll content. (2) Premature harvest time are proned to mass tiger skin disease that harvest is bigger loss, if the harvest time earlier to avoid the fruits of long time storage. (3) The later harvest time, Fuji apple fruit respiration peak coming faster, if not put in storage as soon as possible, material inside the fruit respiration is increased, resulting in large losses, affect the fruit nutritional value and flavor. Should be warehouse storage as soon as possible. (4) In suitable harvest, the hardness, soluble form content, organic acid content Fuji apple fruit change little.
