杜甫居蜀飲食詩探究 姚 振 黎 (台灣清雲科技大學教授) 六朝隋唐學術研討會 地點:時間:2003年10月17-19日 摘要 詩聖杜甫(712-770AD)寓居四川近十年,寫四川飲食詩至少三十餘首,其中尚不包括如〈種萵苣〉借以自喻,未提及飲食烹調食用者。凡此寓蜀之飲食詩,流傳至今一千二百餘年,除可作為中國古代社會、文化、生活研究之第一手資料,對元稹、白居易之寫實,韓愈之怪奇,劉禹錫、杜牧之雄傑,劉長卿之流利,李商隱之淒艷,以至宋金元明以來稱大家者,雖面貌不一,甚至炫奇展異,然沿波討源,杜甫實莫不為開風氣之先。 本文自杜甫晚年居蜀飲食詩探究之,或可使吾人試取一瓢,嚐嚐其中深味。寫作方法(methodology)係以杜詩原典為經,巴蜀飲食為緯,文分五部分:壹、杜甫飲食詩作與其家學背景;貳、杜甫居蜀之生活況味與心境;參、杜甫居蜀之食材與烹饌;肆、杜甫居蜀飲食詩之文化訊息;伍、杜甫居蜀飲食詩之內涵與風格;陸、結語:對飲食文化與詩歌文學之影響。蘄能由杜詩之另一面向,認識杜甫之人格與風格。 關鍵字 杜甫、飲食詩 A Study of the Gastronomic Poems of Du Fu Written While He Lived in Sichuan ? Chen-Li Yao Dean, College of Humanities and Sociology Ching Yun College, Taiwan Abstract The “Sage of Poetry”, Du Fu (712-770AD), wrote several thousand poems during his life, of which 1,439 have survived. Toward the end of his life, Du Fu made Sichuan, then known as Shu, his home for almost ten years. He especially enjoyed the food and drink in Sichuan, and once wrote, “The wine of Shu is unmatched anywhere in the world because of it is richness; Fish from the river is the tastiest anyone could ask for.” He wrote many verses like this, which enjoy great popularity. ???? The methodology adopted in this paper has been to measure, so to speak, the longitude of Du Fu’s poems against the latitude of food and drink in Sichuan. It uses both citations from China’s ancient canon, and also citations from Du Fu’s poems written in Sichuan. It probes into food materials used in Sichuan cuisine, and cooking methods for Sichuan dishes. It cites examples of famous Sichuan dishes mentioned during Du Fus residence in Sichuan, both in relation to his mental state and appetite at the time, and also what influence they have had on gastronomic culture nowadays.? Through this paper, we can examine Du Fus character and style from various angles. At the same time, in view of the ancient facts, we can enhance our appreciation not only of the Sichuan cuisine, but also of the Chinese culture of food and drink as a whole. ?
