【摘要】
抗性澱粉(Resistant starch, RS)係指人體小腸中無法消化水解而僅可於結腸中發酵之澱粉物質,其具有類似於膳食纖維之生理功能,可藉由加工方式而製得。因此本研究在探討玉米澱粉單軸擠壓加工,擠出物中抗性澱粉含量的。研究中探討擠壓加工條件(進料含水率、套筒溫度、螺軸轉速)條件(溫度、時間),對擠出物中抗性澱粉含量。結果顯示,進料含水率與套筒溫度擠出物中抗性澱粉含量顯著(Pr<0.05)進料含水率40%、套筒溫度140℃及螺軸轉速40 rpm所得之擠出物中抗性澱粉含量最高2.688%);此外,增加擠出物的儲存時間(14天)與降低儲存溫度(4℃)會顯著地(Pr<0.05)擠出物中抗性澱粉含量玉米澱粉進料含水率40%、套筒溫度140℃及螺軸轉速0rpm加工,所得之擠出物4℃儲存14天後抗性澱粉含量4.246%)。根據熱焓性質分析結果,不同擠壓條件下所得之擠出物其糊化溫度約在1~154℃之間,此外焓(To, Tp, Tc△H)會隨著螺軸轉速之降低而增加。在進料含水率35及40%下,擠出物之溶解度會隨著螺軸轉速之降低而增加;在進料含水率35%時,膨潤力會隨著螺軸轉速增加而明顯下降擠壓加工、儲存試驗、玉米澱粉抗性澱粉The resistant starch (RS) is the starchy material that would not be digested after hydrolyzed in human’s small intestine, but would be fermented in colon. Therefore, the physiological functions of the resistant starch are analogous to the dietary fibers, which can be produced by processing. The objective of this research is to study changes of resistant starch content (RSC) of corn starch processed by single-screw extrusion processing and thereafter storage. Specifically in the research, effects of the extrusion processing (feed moisture content, barrel temperature, screw speed) and storage conditions (temperature, time) on the resistant starch content of corn starch extrudate were investigated. According to results of the study, increasing the feed moisture content and barrel temperature would significantly (P0.05) increase the RSC of extrudate. The corn starch, processed by feed moisture content 40%, barrel temperature 140℃, and screw speed 40 rpm, had the highest RSC (2.688%). In addition, increasing storage time (14 days) and decreasing storage temperature (4℃) would significantly (P0.05) increase the RSC of extrudate.
