年产500吨膳食纤维乳饮料工厂设计田昂（安徽工程大学生物与化学工程学院）摘 要膳食纤维摄入不足被认为是导致的肥胖症、动脉硬化、冠心病等现代“文明病”的发病率上升的一个重要原因。联合国粮农组织和美国、加拿大、日本等国颁布的膳食指导大纲以及我国近年颁布的中国食物结构改革与发展纲要中也确认了食物纤维是平衡膳食结构的必要营养素之一。果胶是天然存在于水果及蔬菜中的水溶性膳食纤维，是一种天然、营养、健康的食品配料，被广泛应用于果酱、饮料及乳制品等食品中。本项目对开发苹果渣资源和推动膳食纤维生产的的行业进步和产业升级具有重要的意义。本论文进行了年产500吨膳食纤维乳饮料食品工厂设计,以苹果渣，牛乳为原料，研究制作膳食纤维乳饮料的生产工艺，确定了生产膳食纤维乳饮料的最佳生产工艺参数，确定了每天原料乳需要量为2694kg，白糖666kg，稳定剂15.4kg等。每日生产用水量55.5吨，生产用电1514KW，生产用气量6.75U，对主要生产设备进行了选型，为乳饮料产品实际生产提供了相应的指导。主要包括乳饮料的发展，乳饮料工厂建设的目的，对膳食纤维乳饮料生产的物料、能量进行衡算和主要设备的计算等工艺计算，进而依据《食品卫生规范》（GB8952-1988）和《食品企业通用卫生规范》（GB14881-2013）进行设计。根据工厂的各种要素确定工厂厂址在芜湖市三山区临江工业园，项目固定资产总投资834.32万，生产成本686.23万，销售总利润371.53万元，投资利润率41%，投资回收期6年，企业的资产增长率高，投资回报率高且增长较快，可见公司的营运能力和盈利能力良好。关键词：果胶膳食纤维提取 ；乳饮料 ；生产工艺 ；工厂设计 Design of annual output of 500 tons of dietary fiber milk beverage factoryTian Ang(College of Biology and Chemical Engineering,Anhui Polytechnic University)AbstractInadequate intake of dietary fiber is considered to be an important reason for the rise in the incident of obesity,arteriosclerosis,soronary heart disease and other modern “civilization disease”.
