摘要 饮食是人类活动中极其重要的一部分，几千年来的饮食习惯形成了独具特色的饮食文化。这些饮食文化在我们传统文化中占据重要位置，也影响了我们当代人的饮食习惯。特别值得关注的是唐代饮食的胡化现象，这得益于大唐高度发达的经济、开放的思维和与周边民族的深入交流。本文主要围绕唐代饮食中关于胡食部分进行研究。在文章的第一章节介绍唐代饮食的胡化现象产生的背景，分析这种现象产生的社会原因。然后介绍胡食的内涵，对于什么是胡食做一个概念上的界定，确定我们的研究范围。第二章主要介绍胡食的种类，了解胡食具体指哪些食物、文献上有哪些记载。对于胡食种类的介绍分为四大类，主要是面食类、水果类、蔬菜类和酒类。在本文的第三章介绍胡食对唐代社会生活的影响。这里的影响主要介绍四个方面。一是对日常饮食风格的产生的影响。二是以“胡姬酒肆”为代表的“胡风”综合体的出现的当时社会产生的影响。三是胡食成为界定社会阶层高低的标准之一。四是胡食风靡之下汉文明的延续。本文通过对有关胡食的这几个方面的介绍，期望能够对于唐代饮食的胡化现象有一个全面而具体的认识，能够为今后的研究提供借鉴。 关键词：唐代饮食；胡食 ；影响 Abstract The human diet is extremely important part of the activity, diet for thousands of years to form a unique food culture. These food culture occupy an important position in our traditional culture, but also affected our modern eating habits. Of particular concern is the Tang Hu diet phenomenon, thanks to Datang highly developed economy, an open mind and in-depth exchanges with neighboring peoples.
