凤凰单枞乌龙茶重金属污染风险评价-食品科学

※分析检测 食品科学 2008, Vol. 29, No. 07 375 1,2 2 苏新国 ,段 俊 (1.广东食品药品职业学院食品科学系,广东广州 510520 ;2. 中国科学院华南植物园,广东广州 510650) :采用四-(对氨基苯基)- 卟啉(T4-APP)柱前衍生结合高效液相色谱法对比了中国科学院无公害生产基地及中、 高、低山产区的四种凤凰单枞乌龙茶及其茶汤的重金属含量,并对比国家卫生标准进行重金属污染风险评估。结 果表明无公害生产技术降低了成品茶及其茶汤中的重金属含量,成品茶铅含量从2.87 μg/g 降低到1.17μg/g ,铜含量 从12.69μg/g 降低到8.89μg/g;茶汤的铅含量从1.80μg/g 降为0.60μg/g,铜含量从5.43μg/g 降为3.62μg/g,茶汤符合 国家卫生标准,并保持良好的感官品质。总体上以中高山茶区乌龙茶及其茶汤的重金属污染风险较低,低山茶区 将作为无公害生产规范重点改造区域。 :乌龙茶;重金属;高效液相色谱法;风险评估 Risk Evaluation of Heavy Metal Elements Contamination on “Fenghuang Dancong ”Oolong Tea SU Xin-guo1,2 ,DUAN Jun2 (1.Department of Food Science, Guangdong Food and Drug Vocational College, Guangzhou 510520, China; 2.South China Botanic Garden, Chinese Academy of Sciences, Guangzhou 510650, China) Abstract :The concentrations of nickel, copper, tin, lead, cadmium and mercury elements in “Fenghuang Dancong ”oolong tea from high, medium, low altitude district were studied. The nickel, copper, tin, lead, cadmium and mercury ions were pre- column derived by tetra-(amidogenphenyl)-porphine (T4-APP), then determined by solid phase extraction and high perfor- mance liquid chromatography. The results showed that non-pollution processing decreases lead proportion from 2.87 to 1.17 μg/g and copper proportion from 12.69 to 8.89 μg/g in made oolong tea, as well as lead proportion from 1.80 to 0.60 μg/g and copper proportion from 5.43 to 3.62 μg/g in oolong tea infusion. The oolong tea produced from high altitude district has optimal sensory quality with sound food safety risk.
