And On peoples health and damage to the environment has obvious.This article is to understand producing and processing status of self-made traditional food sale in the markets of some areas of Guizhou province, detect content of the main chemical risk factors, provide scientific basis for food hygiene supervision and local standards formulation and protect production safety of traditional homemade food all over this province.Methods: This article carries out questionnaires for the purpose of understanding production prescription and food additives, hygiene status of producing places and food hygiene knowledge of producing staff; what is next is to detect and analyze indicators of the main chemical hazards in accordance with national standards and food safety rapid method recommended by Ministry of Health. Results: Processing sites are only limited to small-scaled workshops or roadside shop in the front and backyards for the production and processing tools and equipment are very simple and shabby. Apart from the above mentioned, the employees are characterized for their low education level, lack of the knowledge food hygiene and lack of awareness of the law. In Guiyang city three areas, the common chemical hazards test results in food are as follows: Nitrite content of food is ≤5.5mg/Kg, lead content of food is≤0.49mg/Kg; septum content of food is≤0.01mg/Kg, acid-value content of food is ≤1.3KOH/g Conclusion:Many processing places are small workshops and roadsideshops for the production units, production environment is shabby, facilities are backward and cultural qualities of the processing staff is low ,which lead to poor qua
