永州野生绞股蓝中稀土元素与活性物质的含量及其在沸水中的释出规律 摘要：本研究测定了永州野生绞股蓝中活性物质与稀土元素的含量，并探究了它们在持续煮沸与沸水冲泡两种方式下的释出规律，为永州野生绞股蓝的开发及人们日常保健提供参考。结果发现，（1）所有元素种类的含量极低，其中Sc、Pm、Tm、Lu未被检出，另13种元素含量CeLaNdEuYSmGdPrDyErTbYbHo，所有稀土元素的总含量为0.1377 mg/Kg；沸水处理下，各元素在持续煮沸方式释出量均较自然冷却方式高，总释放量前者为0.0223，后者为0.0414 mg/Kg。（2）皂苷、黄酮、多糖含量分别为20.8、28.1、52.5 mg/g；三种活性物质在沸水处理下均有释出，且释出量随时间增加呈逐渐增加趋势，但在自然冷却和持续煮沸两种不同方式下，各活性物质的释出规律差异明显。两种方式下三者释出总量分别为26.12与48.94 mg/g。（3）沸水处理的两种方式下，三种活性物质的释出量间均表现出显著正相关（P0.01）。结果表明，永州野生绞股蓝活性物质含量较高，且在沸水中释出明显，而稀土元素得含量及其在沸水中的释出量极低，不会对人体健康产生毒害效应，因此，具有显著的保健价值。 关键词：稀土元素 活性物质 释出规律 绞股蓝 中图分类号：Q945.1 文献标识码：A Content of REE and active substances in wild Gynostemma pentaphyllum of Yongzhou and they release law in boiling water Abstract: The content of REE and active substances in wild Gynostemma pentaphyllum of Yongzhou and they release law in boiling water by two way of continuous boiling and natural cooling were analyzed in the present paper to provide references for the its comprehensive development and daily health care applications. Results showed that, (1) The contents of all rare earth elements(REE) were extremely low, and Sc, Pm, Tm and Lu could not be detected, and the contents order of other 13 elements were CeLaNdEuYSmGdPrDyErTb YbHo, total content of rare earth elements was 0.1377 mg/Kg. elements released more in continuous boiling way than natural cooling way, the total release amount of the former way was 0.0414, the latter was 0.0223 mg/Kg. (2) The content of saponins, flavonoids, polysaccharide were 20.8, 28.1, 52.5 mg/g. Three kinds of active substances all released from Gynostemma pentaphyllum under boiling water treatment, and the release amount increased gradually with the increasing of processing time while these active substance showed different release rules in two different ways of natural cooling and continuous boiling.
