Kaolaolao
典故传说:栲栳栳(kǎolǎolao)是山西高寒地区(主要是大同、吕梁、忻州等地区)用莜面精工细作的一种面食小吃。栲栳是用竹篾或柳条编制成的一钟上下粗细一致的圆框,形状象斗,是农家专门用来打水或装东西的一钟用具,也叫笆斗。莜面栲栳栳制法、名称来历,可以追溯到1400年前的隋末唐初。民间相传,唐国公李渊被贬太原留守,携家眷途经灵空山古刹盘谷寺,老方丈特制了这种莜面食品以款待。李渊问:“手端何物?”老方丈答:“栲栳栳”。
栲是植物的泛称,栲栳指用竹篾或柳条成的盛物器具(《辞海》)。后来李渊当了皇帝,便派老方丈到五台山当住持。老方丈带领众僧赴任,路过静乐县,看莜麦初收,便把莜面栲栳栳制法传给当地。再后来这种民间面食传遍了晋、陕、蒙、冀、鲁等地,成为北方山区人民的家常美食。
民间还有一种说法,相传李世民父子在太原起兵,用的就是这种面食犒劳三军,
一举建立大唐王朝,栲栳是由犒劳一词流变而来。虽是民间传说,但莜面栲栳栳在山
西民间除了是家常美食外,确实还有犒劳亲朋贵宾之意。在雁北和吕梁山区,人们赋
予吃莜面栲栳栳以“牢靠”、“和睦”等美好象征。每逢老人寿诞、小孩满月或逢节待客
,多以此进餐。山区有些人家婚配嫁娶时,新郎新娘也要吃,意谓夫妻白头到老。年终
岁末时更要吃,以祈全家和睦、人运亨通。
Legends and allusions: Kaolaolao is a kind of snack made from naked oats which usually can be found in high altitude places of Shanxi province (mainly in Datong City, Lvliang City, Xinzhou City). Kaolao is a cylinder like food steamer, normally with a diameter about 12 inches, which is made of bamboo or willow twig. It can also be used to fetch water or other things, and it also be called Badou. The origin of Kaolaolao can date back to the end of Sui Dynasty and the beginning of Tang Dynasty, which is more 1400 years from now. It was said that Liyuan was degraded as the mayor of Taiyuan City in Sui Dynasty, and when he and his family went by a temple, the monks’ leader treated them with a special food made from naked oat. Liyuan asked, “what’s this?”, and the leader monk answered, “Kaolaolao”. Later, Liyuan became the emperor of Tang Dynasty, he made the food famous.
In ancient China, Kao is the general name of plant, and Laolao is a special container made of bamboo or willow twig. Later Li Yuan became the emperor of Tang Dynasty and the appointed the lead monk as the president of the Wutai Temple. When the lead monk and his prentices passed Jingle County, they saw the farmers harvesting the naked oats. Then he taught the local people the making process of Kaolaolao. Since the food is very delicious, it was spread to many places of Shanxi and other provinces around north China. After that,
