After 30 minutes, the salted fish for 5 minutes before it is ready for smoking. A smoker is a cooking facility for smoking meat, including four vertical layers. Burning charcoal covers the bottom of the smoker with sawdust on top of it. The ed fish is ced on the rack above the sawdust, absorbing flavor from the wood on the top level of the smoker. In the fifth step, the fish is laid side by side in the smoker for hours. When it turns yellow, the smoking process is done.
