1CeciliaChiang,namedthe“motherofChinesefoodinAmerica”,afamedrestaurateurwhohelpedintroducerealChinesefoodtoAmericainthe1960s,diedonOctober28,2020attheageof100.Openedin1961,CeciliaslegendarySanFranciscorestaurant,theMandarin,wasarguablythebestChineserestaurantintheUSforover30years.ShechallengedtheAmericanideaofChinesefoodandtransformedtheirappreciationforauthenticChinesecuisine.
2Ms.ChiangwasborninWuxiin1920astheseventhdaughterinawealthyfamily.Afterherparentsdied,Ceciliamanagedthebusinesses?financeswhilestillinherteens.
3Ms.ChiangcametoSanFranciscoin1959.OnceinSanFrancisco,shemettwoacquaintanceswhowantedtoopenarestaurant.Ms.Chiangagreedtoputupahugedeposit.Butwhenthetwowomenquit,Ms.Chiangfoundtoherhorrorthatthedepositwasnotrefundable(可退还的).Shedecidedtoopentherestaurantherself.“IbegantothinkthatifIcouldcreatearestaurantwithWesternstyleserviceandthedishesthatIwasmostfamiliarwith—thedeliciousfoodofnorthernChina—maybemylittlerestaurantwouldsucceed,”shewroteinherbook.
4TheMandarin,whichwasopenedin1961asasmallrestaurant,introducedcustomerstomainlySichuan,ShanghaiandCantondishes.Theearlydayswereespeciallytough.Butlittlebylittle,Chinesediners,andafewAmericans,cameregularly.Overnight,thetablesfilledandbecameahugesuccess.
5Ms.Chiangenjoyedmanyextraordinaryhonors.In2013,whenshewas93,shereceivedthelongoverdueLifetimeAchievementAwardfromtheJamesBeardAwards,knownasthe“Culinary(烹饪的)Oscars”atNewYorksLincolnCenter.CeciliaconsidereditherlegacytohaveredefinedwhatAmericansknowaboutChinesefoodandculture.Inheracceptancespeech,Ceciliasaid,“Thisisanincrediblehonor.JamesBeardwason
