摘 要 在啤酒生产中，糖化是最重要环节之一。目前在国内，啤酒生产有两种方法：煮出糖化法和浸出糖化法。煮出糖化法又分为：一次糖化法、二次糖化法及三次糖化法。 但是目前国内最常用的糖化方法是二次煮出糖化法即本次设计所采用的生产方法。因为浸出率较高，并且经过二次煮沸后生产出的啤酒品质较高，而成本相对较低。 设计根据所选工艺，进行了物料衡算、热量衡算，设备的选型及车间布置，满足10kt/a，10.8°啤酒的生产任务。在本次设计中选用了三锅两槽体系的成套糖化生产设备，即糖化锅、糊化锅、煮沸锅、过滤槽及回旋沉淀槽，并配有板式换热器、糖化水罐等一系列辅助设备。 依据生产要求，所选设备，及根据车间布置相关原则，最后确定了一座30000×18000的三层厂房，占地540 ，并配置了相关人员来完成糖化工段的生产要求。 关键词：糖化；物料衡算；热量衡算；生产设备；车间布置 Abstract In beer production, glycosylated is one of the most important part. Currently in China, beer production has the two ways：the boiling of glycosylated law and the Leaching of glycosylated law. Boils the glycosylated law to divide into once glycosylated law, twice glycosylated law and the three times glycosylated law. But now the most commonly used method is the second boil glycosylated law of this design that is used by the production methods. Because the higher rate of extraction, and after the second boil beer production to higher quality and relatively low cost. According to the selected design process, carried on the calculation about the raw material,the energy,equipment selection and layout workshop，then this could satisfy the demand for producing beer, 10kt/a 10.8°.Has selected the systerm of three pots and two completes as the set equipment , which contains the saccharification pot, the dextrinize pot, the boiled pot, the filter-tank and the maneuver stilling basin. And the disic heat interchanger, the saccharification watering can are applied to the supporting facilities. Based on production requirements, selected equipment and according to relevant principles workshop layout,a final determination of the 30000 × 18000 three-tier plant, An area of 540 .
