东北农业大学学士学位论文 学号：日处理100吨鲜奶的液态奶 生产车间的设计 学生姓名：指导教师：所在院系：食品学院所学专业：食品科学与工程 研究方向： 东 北 农 业 大 学 中国·哈尔滨2 0 0 8 年 月 Northeast Agricultural University Bachelor Degree Dissertation SN:Design of Dairy Plant with 100 Tons Fresh Milk Process Per Day Candidate: Zhao Yadong Supervisor: Pan Wenbiao College: Food College Major： Food Science Engineering Specialty： Dairy Science Northeast Agricultural University Harbin·China May,2008摘要 随着社会的进步，国民经济的增长，乳业的发展贯穿于社会的发展历史之中，在人类食品中占有特殊的地位，它对人类健康和增强身体素质的重要价值逐渐被国民重视。 本项目拟设计日处理100吨鲜奶，可同时生产酸奶、巴氏杀菌奶、UHT奶三种产品的液态乳生产车间。本文对产品方案的制定，工艺流程的设计，车间的平面设计进行了讨论，利用autoCAD制作出车间的工艺流程图和平面布置图；同时对乳制品加工过程中的物料平衡进行计算，并据此实施设备选型和水电汽平衡的估算。 本设计中，收奶采用全自动收奶脱气计量一体机，然后将鲜奶储存于六台32吨的室外奶仓。车间采用两台巴氏杀菌机和一台超高温杀菌机，可进行巴氏杀菌奶（85℃，15S）、酸奶（95℃，300S）、UHT高温奶（137℃，5S）的杀菌，设计六台发酵罐进行酸奶的发酵，同时装置五台保温储奶罐作为产品灌装前的缓冲装置，然后对三种不同产品分别进行灌装。车间物料管道和设备的清洗Design of Dairy Plant with 100 Tons Fresh Milk Process Per Day Abstract Along with the progress of society and the growth of national economy,Dairy development went through in the development of the society.It occupied a special position in the mankinds food.Nowdays the daiy products important value to mankinds health and body character is accepted by the citizen gradually. A fluid dairy plant that handles the ability of 100 tons fresh milk per day and produces the yogurt,the pasteurized milk and UHT milk was designed. The product project making,the technique design and the shop-floor diagram were analysied,then the flow chart and shop-floor diagram were drew with the system of the autoCAD. Material balance,device selection and electricity balance in the dairy process were included in the text. The automatic milk-acception system was equiped in the design with which milk was adopted in six outdoor- keeping tanks whose volume is 32 tons.
