Chongqing Academy of Chinese Material Medics, Chongqing 400065, China Abstract: The process under intergrated treatnent with ultrasonic of ultrasonic and cellulase both together or each separately to promote the extraction of isoflavones from soy residue was studied. The microscopic photographs show that both ultrasonic and cellulase can destroy the cell wall of the soy residue and facilitate the diffusion of isoflavones. The extraction results show that both the processes of ultrasonic and cellulase can promote the extracting rate of the isoflavones, and when using the ultrasonic and cellulase together, the amount of the extracted isoflavones can increase to 8.34 mg per gram of soy residue, and comparing with the amount extracted without taking any measure of ultrasonic or cellulase, the increasing ratio is about 51.83%. It was concluded that the processes of ultrasonic and cellulase can be used to promote the extraction of isoflavones from soy residue effectively.
