Unit Eleven Food and Fitness Warm-up Question about Food As we know, Guangzhou-style cuisine is the representative of Cantonese cuisine, So how much do you know about the characteristic of Guangzhou style cuisine (广东菜特色)? The Guangzhou style is broad and rare in ingredients, exquisite(精细的)in matching of ingredients, good at taking initiative after imitation and modifying according to the tastes of guests. The Guangzhou style cuisine incorporates(糅合) the strong points of other schools(菜系) and keeps on taking initiative (创新). Cantonese Delicacies (美味) The cuisine pays much attention to clearness(清), freshness(鲜), refreshment (爽), smoothness(滑), tenderness(嫩), and crispness (脆)and particular to smell (香味)and presentation(卖相). The styles are numerous and complete in flavoring. 1. Slow Fired Delicious Soup (老火靓汤) ? The Cantonese like to boil slow fired delicious soup very much. They often choose some meat such as chicken, pork ,snake or tortoise etc, with dried sea food (海鲜干货) or Chinese traditional medicinal materials(中药材), and add some water to boil, at last season by a little salt to keep the pure natural flavor. The soup always should be boiled for several hours with slow fire. 2. Boiled Chicken (姜葱鸡) It is a kind of typical Cantonese style cuisine made by boiling the chicken in water. It is characterized for the simple procedure, tenderness, and preservation of the natural flavors and textures. Making procedures: take a local chicken under 1kg; first clean it and then put it into sizzling water; wait for about 15 minutes, during this period take out the chicken twice; then cool it down in cold water; take out the chicken and let it dry; coat the surface of the chicken with cooked peanut oil. 3. Boiled Chicken with Ginger and scallion Eating methods and taste feeling: It is eaten with the mixture of ground ginger, scallion shreds, salted and cooked oil.
