Famous Dishes in HuBei Hubei cuisine consists of three parts; they are Wuhan dishes, Jingzhou dishes and Huangzhou dishes. The main making methods are braising, simmering, frying, baking and stir-frying, which all accompany with thick sauce and fresh taste. It is full of folk features. Compared with Hunan dishes, they are less spicy（[?spa?si:] 辛辣）, and less hot（麻辣） than the Sichuan dishes. Therefore, Hubei dishes are more popular with visitors. To Wuhan citizens, the best choice for breakfast is Hot Dry Noodles. It is different from cold noodles with sesame sauce or noodle with soup. When customers order it, cooks will cook the cold noodles which were boiled already with hot water, and then put some seasoning. The noodles are bright yellow and flexible,moreover, it is with good looking and attractive. Dongpo Pork in Huangzhou is one of the famous dishes in Hubei. It is said that it was invented by Su Dongpo when he governed Huangzhou. The features of it is the blending pork with delicious soup, in this way, the pork has soft taste like toufu. In order to memorizing this great poet, people named this dish “Dongpo Pork”. Furthermore, When people make it, two vegetables are going to put in, bamboo shoots in winter and spinach whose Chinese pronunciations are similar with “Dong” and “Po”. Wuchang fish is one kind of freshwater fishes live in Wuchang. Date back to three kingdom period; Wuchang fish was famous all over China. With the help of Chairman Mao’s famous poem, “ Drinking the water in Changsha and having the fish in Wuchang”, Wuchang fish has got great attention and it is famous not only in China but also in the world.
