Abstract
Citric acid is a kind of weak acid which is found naturally occurring in fruits such as oranges and lemons. It is a widely used acid?agents in our country because of its mild distinct sour. Meanwhile,?it?is also?commonly used preservative additive in?the?food?and beverage?industry. In biochemistry, it is important as an intermediate in the Krebs (citric acid) cycle and therefore occurs in the metabolism of virtually all living things. Therefore, citric acid play an critical role in industry, food industry, medical field and many other fields.
The Current Situation
Worldwide annual production of citric acid stands at approximately 1,700,000 metric tons. More than 50% is produced in China. And more than 50% is used as an acid agents in beverage-producing and approximately 20% was used in other food-producing. Another 20% is used for detergent applications, and 10% is used in the production of non-food related products such as cosmetics, pharmaceuticals, and in the chemical industry.

Food Flavoring Agents
It is widely used as an food additive in the food industry because of many factors such as its low price and ease of production. Citric acid has been declared safe to consume by government authority after some simple experiments which were made by relevant departments. When added to food products or beverages, citric acid can provide a sharp, sour taste which increases appetite and enhances flavor by stimulating the tongue of person. Almost all companies use it to give their food products, such as candy and soft drinks, an authentic 揻ruity?flavor so that their products can make a satisfactory deal. It is the most popular sour white powder, also known as “sour salt”. Some people specifically add it to their food to alter taste.
