年产11万吨啤酒工厂的初步设计
摘 要
随着人们生活水平的提高,饮食结构的不断变化,人们对啤酒的需求量也越来越高。本设计顺应了近几年来啤酒工业飞速发展的需求,同时使原料得到充分的利用,最大限度的节约了能源,提高了设备的利用率。
本设计是年产11万吨啤酒工厂的初步设计,酿造的是12度普通淡色啤酒。整个设计包括,厂址的选择及平面的初步设计;原料的选购,本设计采用的是优质大麦和大米;啤酒生产工艺流程的选择与论证,如糖化采用复式一次煮沸法;全厂的物料衡算;发酵车间的热量蘅算(蒸汽耗量的计算);无菌空气耗量的计算;用水量的计算;冷量的计算;发酵车间生产设备的选型计算(包括设备的容量、数量、主要外形尺寸);还有污水的初步处理,及基本经济预算等。在设计的各个部分反复多次证明了此设计的合理性和可行性。
愿此设计能为相关企业的开源节流提供新的依据。

Abstract
Along with people living standard enhancement, diet structure unceasing change, the people are also getting higher and higher to the beer demand. This design complied with the demand of the beer industry which developed at very fast speed in the last few years; at the same time make full use of raw material, maximum saved the energy, raised equipments use factor.
This design is the preliminary design of a beer factory produces 110,000 ton yearly, what the factory brews is 12 degree ordinary pale beers. The entire design includes, the choice of the factory’s site and plane preliminary design; Raw material selecting and purchasing, what this design uses is the high quality barley and the rice; choice and proof of the technique of Beer production flow, For instance the saccharification uses the multiple decoction method; Entire factory material balance; Fermentation plants quantity of heat calculates (steam consumption computation); Sterile air consumption quantity computation; Water consumption computation; The consumption cold calculated; Fermentation plant production equipments shaping computation (including equipments capacity, quantity, main external dimensions); Also has the sewage primary treatment, and basic economical budget and so on. In design each part has proven this design rationality and the feasibility many times repeatedly. I willing this design to be able to tap new resources and reduce expenses for the related enterprise provide the new basis.
