The recent study found that excessive intake of aluminum can destroy the genetic material DNA in nerve cells function, impairment the function of memory. And aluminum can also accumulate in the bone, causing aluminum-induced osteomalacia. Human intake of aluminum long-term and excessive is harmful to health. In order to understand the pollution situation of Zhengzhou city at present market of heavy metal aluminum chips sold in expansion, this study through the analysis of heavy metals content puffed potato chips rate of different types, different brands, different production conditions, different sources of potato chips differences in Al content and exceed the standard, to evaluate their pollution situation, and put forward the control the corresponding strategy.
