湘茶质量安全现状与质量安全技术 张向娜 黄建安* 刘仲华* （湖南农业大学 园艺园林学院 茶学教育部重点实验室 长沙 410128) 摘 要： 湖南省是我国重点产茶省之一，湖南茶产业在国内占有重要的地位。如今，湖南茶产业发展迅速，人们对茶叶的消费力度不断加大，这就对茶叶的质量安全水平提出了更高的要求。目前，湖南省茶叶的质量安全水平已经大大提高，但安全隐患仍然存在，局部不稳定情况时有发生。因此，提高茶叶的质量安全水平，加强茶叶质量安全控制，以增强湘茶的竞争力势在必行。文章概述了湘茶的质量安全现状，指出了茶叶质量安全存在的问题，并提出了构建湘茶质量安全体系的建议和对策。 关键词： 湘茶；质量安全现状；质量安全措施 Hunan tea quality and safety of the status quo and technology Zhang xiang-na Huang Jian-an* Liu Zhong-hua* (Key Lab of Tea Science, College of Horticulture and Landscape, Hunan Agriculture University, Changsha 410128, China) Absract：Hunan province is one of the key tea-producing provinces in our country, Hunan tea industry occupies an important position in China.Nowadays, with hunan tea industry developing rapidly and tea consumption strength increasing, the quality of the tea safety level should be put forward higher requirements.At present, quality and safety level of Hunan tea has been greatly improved, but the safety problems still exist, local unstable situation.Therefore, improve the level of tea quality and safety, strengthen the tea quality and safety control, in order to enhance the competitiveness of hunan tea is imperative.This paper summarizes the present status of hunan tea quality and safety and points out the existing problems in tea quality and safety, and put forward the suggestions and countermeasures on hunan tea quality and safety system. Key words: Hunan tea Quality and safety of the status measures 前言 湖南自古名茶荟萃，茶产业在我国具有重要的位置。近年来，湖南茶业实现了跨越式发展，预计2014年，全省茶园面积将达到198万亩，茶叶产量18.7万吨，茶叶出口4.5万吨，出口创汇将突破1.2亿美元，茶叶综合产值将达到540亿元。湖南作为我国的产茶大省，始终把茶叶质量安全作为湖南茶产业的生命线和核心竞争力。湖南省各级政府高度重视茶叶质量安全，采取了一系列清洁化生产、建立茶叶生产质量安全保证体系等措施，大力推行茶叶无公害生产。 随着人们生活水平的提高、健康意识的增强，消费者对茶叶的质量安全的要求也日趋严格。正确认识茶叶质量安全的现状，对于促进茶产业的发展具有重要意义。但目前对湖南茶叶质量安全现状的研究资料和改良建议较少。在当前食品质量安全事故频发的新形势下，为了更好地了解湖南茶叶质量安全现状及存在的问题，文章对湖南省当前茶叶质量安全整体情况进行了综述，并提出了构建湖南茶叶质量安全体系的建议和对策，以期为湖南省茶叶质量安全的进一步提升提供参考依据。 1.茶叶质量安全的概述与意义 1.1概述 茶叶质量安全是指茶叶质量与茶叶饮用安全性的总称［1］。茶叶质量，包含可食用性、保健性、营养性、安全性、可信性、经济性和美观性等特性。茶叶饮用安全指的是茶叶质量状况对饮用者健
