毕 业 论 文 题 目： 茶多酚的提取工艺与研究 学 院： 轻化工程学院 年级、 专业： 2011级应用化工技术专业 学 生 姓 名： 学 号： 指 导 教 师： 完 成 时 间： 2014年5月20日  茶多酚的提取工艺与研究 文涛 徐云枭 指导教师：段晓静 （西昌学院轻化工程学院 2011级应用化工技术专业） 摘 要 茶多酚是茶叶中儿茶素类、黄酮类、酚酸类和花色素类化合物的总称。因其化学结构中带有多个活性羟基，对人体保健极为有利，且有抑菌、杀菌、抗肿瘤、抗辐射等多种功效，作为医药和食品等的添加剂，其开发和应用前景十分看好。 鉴于目前国内外茶多酚的研究有上升趋势以及在药用和食用中的开发越来越受到人们的重视。本论文利用茶叶在乙醇溶液中榕基溶解条件下通过设置实验条件，通过单因素和多因素实验考察操作条件对乙醇提取率的影响因素，确定其最佳条件。在最佳实验条件下，用乙醇溶液对茶多酚的提取。实验结果表明，最优工艺条件为乙醇浓度80%，提取温度为80℃，液料比为1:3（g/L），提取时间为60min。 关键词 茶叶 提取 功效 The thermal stability of buckwheat research Wen tao Xn Yun-xiao Supervisor： (applied chemical technologygrade 2011,School of Applied and Chemical Engineering of Xichang College) Abstract Is tea catechins in tea polyphenols, flavonoids, phenolic acids and the floorboard of the compounds of flower pigments. Because of its chemical structure with multiple active hydroxyl, is highly advantageous to human body health, and has antibacterial, sterilization, antitumor, resistance to radiation and so on the many kinds of efficacy, as medicine and food additives, such as the development and application prospect is good. In view of the tea polyphenols research at home and abroad and has a rising trend in their medicinal and edible, developing more and more get peoples attention. This paper use the tea under the condition of the banyan base dissolved in ethanol solution by setting the experimental conditions, through the single factor and multiple factors experiment inspects the influence factors of operating conditions on the ethanol extraction yield, determine the best conditions. Under the optimum experiment conditions, ethanol solution for the extraction of tea polyphenols. The experimental results show that the optimal process conditions for ethanol concentration 80%, extraction temperature is 80 ℃, liquid ratio of 1:3 (g/L), extracting time for 60 min. Key words T
