毕业设计说明书 作 者: 黄旭龙 学 号: 0904150120 院 系: 化学工程学院 专 业: 生物工程 题 目:年耗粮3万吨啤酒工厂初步工艺设计 重点工段—糖化工段 指导者: 张秀廷 副教授 评阅者: 2013 年 6 月 吉 林 摘 要 本设计为年耗粮3万吨110浅色啤酒淀粉辅料啤酒厂工艺初步设计,重点工段—糖化工段。采用的工艺为高浓度稀释工艺,设计确定工厂厂址、工艺流程和工艺条件以及技术经济指标;进行全厂物料衡算;对生产过程中的水、电、汽、冷耗进行计算;对主要生产设备进行计算和选型;并对主要设备糖化锅进行了计算与选型。设计中采用了连续浸渍湿法粉碎,二次煮出糖化工艺和高温发酵、高温后熟工艺。糖化工段是设计的重点工段。本设计采用高浓度稀释工艺,提高了糖化、发酵、贮酒以及啤酒澄清设备的利用率,适合大型啤酒厂酿造淡爽型啤酒的大型工艺。 关键词:啤酒;糖化;发酵;设计;糖化工段 Abstract This design for the consumption of grain 30000 tons of starch materials 110 light beer brewery process preliminary design, the key section -- saccharification section..
