* Crossing Bridge Noodles The legend A young scholar was studying hard for his imperial exams. His wife,?for some unexplained reason, cooked for him every day on the far side of a local bridge . Because she was worried about the food not being fresh by the time she was able to bring it to her husband across the bridge she prepared a large earthen pot of chicken soup. The noodles and the husbands other favorite ingredients were kept in another container. When the wife arrived she combined them — just before eating, providing a nutritious bowl of steaming hot not-soggy noodles. In this way, with the loving support of his dear wife, he was able to study hard and consequently made the highest marks on his exam. In years past Kunming locals considered two varieties of noodles to be desirable. The distinction between the two is quite simple. “Sour paste” as the name suggests tastes a little sour, and is characterized by a relatively thick and soft rice noodle. The “dry paste” along with not being sour is relatively thin and rigid. Sour paste is the most authentic. Kunming noodles are not widely considered to be the bes t in Yunnan however. You have to get out to Mengzi or Jianshui County to try the creme of the noodle crop. Things are changing though, and modernization has not left the habits of noodle eaters untouched. All kinds of new noodles are flooding onto the market. Many people prefer the more ‘efficient’ water-washed rice noodles or the purple rice noodles that are mixed with purple rice. And of course, there is the Instant version — complete with colored sauce — that you can get for breakfast. It only takes about a minute to prepare.
