花生蛋白的功能特性及改性研究概述 摘要 花生营养丰富,是公认的优质植物蛋白资源。这篇文章对花生蛋白的功能特性及其在食品工业的应用进行综述,并分析了花生蛋白的改性研究现状,对其开发利用前景进行了展望。 关键词:花生蛋白;植物蛋白;功能特性;改性 BRIEF REVIEW OF STUDIES ON FUNCTIONAL PROPERTIES AND MODIFICATIONS OF PEANUT PROTEINS ABSTRACT It is well known that peanuts are rich in nutrients and an excellent source of vegetable proteins. The functional properties and applications of peanut proteins in food industries were reviewed in this article. Moreover, studies on present modification of peanut proteins were analyzed and the prospects for the exploitations of peanut proteins in the future were viewed.
