China May,2015 摘 要 人参果有很高的营养价值,富含多种微量元素和一些活性有效成分,具有能够减弱或清除人体内自由基及抗衰老 , 防癌的生理作用,是一种天然营养保健水果,果肉香甜多汁,清新爽口微晾,风味独特,是难得的果中珍品。因此,人参果具有很高的开发利用价值。[1] 人参果保健饮料以鲜人参果捣碎成汁为主要原料,添加白砂糖、酸味剂、香精和稳定剂而制成的一种营养丰富,风味独特的产品。试验中分别研究了单因素人参果原汁的添加量、白砂糖添加量、柠檬酸添加量和CMC添加量对人参果保健饮料品质的影响。通过正交实验,以感官评定为主要依据,并结合理化指标确定了人参果保健饮料的关键工艺过程和工艺参数,丰富了保健饮料市场的品种,为人参果的综合利用提供了有效途径。[2] 试验结果表明:人参果保健饮料的最佳配方为人参果原汁15%,白砂糖10%,柠檬酸0.30%,CMC 0.06%。所得产品色泽均匀,香味协调,酸甜可口,具有一定的市场潜力。 关键词:人参果 保健饮料 最佳配比稳定性Ginseng fruit has a high nutritional value, which riches in a variety of trace elements and the activity of some active ingredients. It can also weaken or remove free radicals in the human body so it has physiological functions of anti-aging and anti-cancer. Ginseng fruit is a kind of natural nutritive health fruit in which the pulp is sweet and juicy, and also tasted daintily with a unique flavor. In conclusion, ginseng fruit is a rare treasures in fruits, and the development and utilization of ginseng fruit, therefore, has a very high value. Ginseng fruit health drink is made from fresh ginseng fruit by mashing it into juice and mixing with sugar, citric acid, essence and stabilizer which finally produces a kind of beverage with rich nutrition and unique flavor. The single factor experiments respectively studied the influence of different amount of ginseng fruit juice, white granulated sugar, citric acid and stabilizer on the quality of ginse
