毕 业 论 文 题目： 橘皮色素的干燥方式和微胶囊工艺研究 子题： 专 业： 食品科学与工程 指导教师： 孔繁东 学生姓名： 姜鹤 班级-学号： 食品092-17 2013年6月  大连工业大学本科毕业设计 橘皮色素干燥方式及微胶囊工艺研究 Drying Methods of Citrus Pigment and Microencapsulation Technology Research 论文完成日期 2013 年 6 月 21 日 学 院： 食品学院 专 业： 食品科学与工程 学 生 姓 名： 姜鹤 班 级 学 号： 食品092-17 指 导 教 师： 孔繁东 评 阅 教 师： 牟光庆 2013年6月 摘 要 柑橘是世界第一大水果，其年产量约为10282万吨。柑橘皮占整个柑橘果重的20％，中国每年产出橘皮可达到300万吨，这些橘皮大部分未得到利用而被放弃，造成严重的资源浪费和环境污染。橘皮色素是一种重要的天然色素，具有开胃，止咳，治疗便秘等保健功效，可代替合成色素被应用到食品，饮料，化妆品等工业领域。本文章主要对废弃的橘皮加以处理提取出橘皮色素，采用不同方式对色素进行干燥，并对干燥后的产品微胶囊化，提高其保存期限。 本文主要研究了不同干燥方式（鼓风干燥，真空干燥，真空冷冻干燥）和不同工艺条件下橘皮色素干燥效果的优劣，以及橘皮色素微胶囊制备的最佳工艺条件。实验结果表明，橘皮色素最佳干燥条件为：60℃，真空干燥。微胶囊最佳工艺条件为：明胶和微孔淀粉作为壁材，芯壁材比1：10，明胶浓度6％，包埋时间90分钟，进风温度160℃，出风温度80℃，此条件下包埋率最大，为98.46％。 关键词：橘皮；色素；干燥；微胶囊 Abstract Citrus are the?worlds largest?fruit, the annual output?of citrus is 102,820,000 tons.The peel of citrus is 20% of the whole weight, Chinas annual output of citrus peel can reach 3000,000 tons,most of these citrus peel are unused and abandoned, resulting in a waste of resources and serious environmental pollution. The citrus peel pigment is a kind of important natural pigment, with appetizing, cough relieving, treatment of constipation and other health effects, can replace synthetic pigment and be applied to food, beverage, cosmetics and other industrial fields. This article mainly dealt with citrus peel pigment extract of abandoned citrus peel, adopt different ways to dry out the pigment, and microencapsulation, to improve the retention period. This article mainly studies under different drying methods and condictings (air drying, vacuum drying, vacuum freeze drying)the drying effect and the quality of citrus peel pigment , the optimum process conditions of citrus peel pigment microcapsule preparation.
