九朝三国古都——郑州 Stewed noodles 河南烩面 Stewed noodles are the characteristics of Henan cuisine. During the han-wei period, it also called soup cake. And then its name gradually change. Finally ,most of people call it Lamb noodles. The noodles are chewy and the soup is mellow and nuanced . Thanks to the reform and open-up policy, there is a great increase in floating population and catering industry. Over the next 20 years , Stewed noodles not only become the symbol food, but also become another style of Zhengzhou. Spicy Soup胡辣汤(Zheng zhou) Spicy soup, also known as hot pepper soup is a common soup for breakfast food in northern China. Common in street stalls early, which is characterized by mild, nutrient-rich, is well suited to meet the other meal. There are many different versions about history of the origins of Spicy soup. Because its main ingredient pepper was introduced into our land in the Tang dynasty, so Spicy Soup should not be earlier than the Tang dynasty. After the Northern Song dynasty decided on Kaifeng as capital, has made significant development of commodity economy. At the same time ,folk snack is flourishing. Medicine works of that time believed that the spicy is good for our health, so hot food is very popular with common people. ?? 胡辣汤,又名糊辣汤,是中国北方早餐中常见的汤类食品。常见于街上的早点摊点,其特点是微辣,营养丰富,味道上口,十分适合配合其它早点进餐。胡辣汤起源  对胡辣汤的历史,说法较多。因为其主料胡椒自唐代才传入中国,故尽管民间有胡辣汤创于周代和曹魏的传说,其产生的上限不应早于唐。   北宋定都开封,商品经济有了长足发展,而民间小吃也随之兴盛,花样百出。《太平惠民和剂局方》等当时流行的医药著作都认为,在食物里加入辛温香燥药物有益行气,故辛辣味食品颇为流行。一种结合了具有醒酒消食功效的酸辣汤的肉粥,成为胡辣汤的雏形。   明朝嘉靖年间。当时,阁老严嵩为了讨皇帝欢心,从一个高僧手中得到一付助寿延年的调味药献给皇帝,以烧汤饮之。该汤美味无穷,龙颜大喜,命名为“御汤”。明朝亡后,御厨赵纪携带此药逃至河南逍遥(今西华县逍遥镇),将此方传到了该地。该地人因此汤辣味俱全,遂改名为“胡辣汤”。 Kaifeng is famous for being seven dynasty’s capital.
