The optimum extraction conditions of polysaccharide in Chinese chestnut were obtained by single-factor test and orthogonal test. The technology is compared with hot water-assisted extraction, microwave-assisted extraction, acid-assisted extraction and ultrasound-assisted extraction. The results show that the optimum extraction conditions are the extraction temperature of 70 ℃, static extraction time of 8 minutes and extraction pressure of 6 MPa with two cycles.
