XX学院 《食品工厂设计》 设计说明书 项目名称：年产5000吨浑浊果汁工厂设计 学生姓名： 学生学号： 指导教师： 设计时间： 食品工程分院 年产5000吨浑浊果汁工厂设计 摘 要：本设计主要是进行年产 5000t 浑浊果汁工厂设计。 年产 5000t浑浊果汁的项目是对应江苏工业经济结构调整的重点项目，本设计从当 地资源、地理环境、政策环境等各项条件出发，针对 5000t 浑浊果汁项目的需要，进行 了车间平面设计、产品方案及工艺论证、设备选型、物料衡算、全厂卫生安全、企业组 织等研究与设计。由于浑浊果汁大部分出口，因此为了使产品质量达到世界水平而对浑浊果汁的 HACCP 也进行了详细的分析与统计。最后对本方案进行了技术经济分析，研 究表明：该项目固定资产投资 1300 万元，年利润达到 768 万元，经营安全率达到 80％， 投资回收期为 2.5 年。 关键词：浑浊 果汁工厂设计 效益分析 Abstract：The Plant design of a 5000-ton production capacity of cloudy juice This study was aimed to design a cloudy juice production plant with a 5000-ton production annual capacity. This plant design is a key project during the process of structural adjustment of industrial economy in Jiangsu Province. Workshop horizontal design, production line, selection of processing technology and equipment, materials balancing, hygiene and safety, and organization were studied and designed for the cloudy juice production, based on the local condition of resources, geographical environment, and governmental policies. For the purpose of export-oriented production, the HACCP procedure was fully analyzed. At last the analysis of technical economy of this project was done, it showed that the fixed assets was 13 million RMB, the annual profit was 7.68 million RMB, the rate of safe management was 80%, and the return time of investment was 2.5 years.
