Physical Traits of Fatty Acids Form Membranes, Micelles, Liposomes and Emulsions In aqueous solutions fatty acids self-orient at water:oil interface. This is due to hydrophobic, non-polar group (alkyl chain) and hydrophilic, polar group (COOH) being on same molecule. Lipid bilayer is the basis for all membranes. Micelles are formed during digestion of fats. Emulsions are possible by use of emulsifying agents. (Example: lecithin). Fatty acids form “soaps” with metals. Sodium and potassium soaps are soluble in water Calcium and magnesium soaps are almost insoluble in water Insoluble
