Factors such as w ater quality, tempera- ture, time, gr anular ity of pine gum, and change of rinsing water quality which influence the br owning dur ing storage and rinsing of pine gum were investigated, and the comparison on non- enzymatic browning of rinsed pine gum and non- rinsed pine gum during melting have been made. T he results showed t hat color of rosin pr oduct become darker w hen water used for stor ag e contained up to 110 000 bacter ia per litre w hich caused serious brow ning of the product and bad odour of turpentine. Pine gum can be stored for 24 months under room temperatur e using distilled water, or 12 months using cool boiled w ater, or 9 months using t ap w ater , and the color of pine gum did not change basically.
