REAL URBAN BBQ RECIPES REAL URBAN BBQ Chef Dean Eliacostas Watch the video at WCIU.com GRILLED SWORDFISH INGREDIENTS YIELD: Makes 6 Servings 1 cup thinly sliced green onions 3/4 cup (packed) cilantro leaves 3 tablespoons extra-virgin olive oil 3 tablespoons fresh lime juice 1 1/2 tablespoons grated lime peel 1 1/2 tablespoons honey 6 8-ounce swordfish steaks (about 3/4 inch thick) PREPARATION Mix first 6 ingredients together and Pour marinade into 13x9x2-inch glass baking dish. Add swordfish, turning to coat. Cover and refrigerate 2 hours, or let stand at room temperature 1 hour, turning fish twice. Prepare barbecue (medium heat). Season with salt and pepper then Grill fish until cooked through, basting often with marinade, about 4 minutes per side. PANZANELLA SHRIMP SALAD INGREDIENTS 4 each 13- 15 Shrimp 1 tablespoons Rosemary chopped 1 tablespoons Parsley chopped 2 teaspoons Garlic Chopped 6 tablespoons EVOO AN Naan bread or any Rustic Bread of your choice 4 each Roma tomatoes cut into 8 pieces ½ each Red Onion Julienne 2 each Fresh Mozzarella cut into quarters 2 ounces Arugala 2 each Basil Leaves AN Salt and Pepper 1 cup Balsamic Vinegar 2 cup EVOO PREPARATION Mix rosemary garlic and olive oil and marinade shrimp for 6-8 hours.
